The two-night benefit was the largest culinary event in the restaurant’s history and marked a milestone for Roth’s Sea & Steak, which welcomed the James Beard Foundation®, the national organization behind the James Beard Awards®, just over a year after opening its doors. Guests enjoyed an evening of Champagne and caviar ahead of a concert at Ford Amphitheater, followed by a 10-course dinner with wine pairings curated by Stewart Prato, General Manager and Wine Director of Roth’s Sea & Steak. Proceeds support Good Food for Good® and the James Beard Foundation’s mission and programs in support of a thriving, equitable, and sustainable future for the independent restaurant industry and broader food system.

“Colorado Springs has always had the talent and the appetite for this kind of event. It just hasn’t always had the national spotlight,” said JW Roth, Founder, Chairman, and CEO of VENU®. “Having the James Beard Foundation in our house, alongside Chef Ricky, Stewart, and our team, was something special. It told people across the country what we already knew about this city.”

The weekend opened Friday, October 9, with Caviar & Cocktails, an exclusive pre-concert soirée at Roth’s featuring Champagne, caviar, cocktails, and passed appetizers. Post mingling; guests were then escorted to VIP seating for the live concert at the award-winning Ford Amphitheater.

The Benefit Dinner followed on Saturday, October 10. Guests arrived on the red carpet for a Champagne reception, then sat down to a 10-course tasting menu that Chef Biswas built as chapters of his own story. The menu traced his path from “Where I Come From,” a lobster in winter curry with coconut and green mango, to “The Land That Found Me,” a Colorado elk with beet, black currant, and juniper. It closed with “Tomorrow,” a dark chocolate and smoked milk course titled “Two Fires.”

Prato, who oversees the wine program at Roth’s, selected each wine to echo Chef Biswas’s menu and orchestrated a service in which every course and pairing arrived as one.

The evening concluded with remarks from Anouska Biswas with the James Beard Foundation, JW Roth, Prato, and Chef Biswas. The remarks were followed by the premiere of “Two Fires,” an 11-minute documentary on the culinary story of Chef Biswas and Roth’s Sea & Steak.

“Every course on that menu is a piece of where I’ve been and where I’m going,” said Ricky Biswas, Executive Chef of Roth’s Sea & Steak. “To share that story with this room, with the James Beard Foundation here to see it, is a moment I’ll carry for the rest of my career.”

“A dinner like this only works when every plate and every glass arrives at the same moment,” said Prato. “I chose each wine to meet Chef Ricky’s courses where they were, and our front-of-house team spent weeks preparing so guests could simply enjoy the night.”

“Every Friends of James Beard Benefit is special, but Celebrating Land & Sea was truly unique. Pairing an extraordinary tasting menu with live music and the backdrop of the Rocky Mountains created an experience our guests won’t soon forget,” said Anouska Biswas, Director of Finance, James Beard Foundation (no relation to Chef Biswas). “Talent and vision were on full display, and it has been a privilege to work alongside Chef Ricky and the entire Roth’s team to support the Foundation’s mission.”

The Friends of James Beard Benefit® series brings together hosts outside the Foundation to raise critical funding for its programs.

Celebrating Land & Sea, A Friends of James Beard Benefit®, was made possible with the support of Performance Foodservice (PFS), S.Pellegrino & Acqua Panna, Black River Caviar, What Chefs Want, CS Wines, Natural Wine Co., The Sorting Table, Johnson Brothers Maverick Colorado, Kermit Lynch, Empire Distributors, Vocal Vineyards, Grapejuice Group and Breakthru Beverage Colorado.
